I would strongly recommend a Grumman Tiger, an AA5B as a trainer. I have taught two people primary in one, and done two instrument ratings. It is my all time favorite training plane and also has a very low panel, and low control forces which makes it great for women students. I don't think that she necessarily needs a female CFI, but as the lady says, there are some very good ones around.

She has a few thousand hours right seat in high performance planes. I want her to learn in a safe airplane that I control the maintenance. The ratty 172 scares me a bit actually.

I have a lot of experience in Cirrus planes, both flying and instructing. It could be done, but will be much more challenging than the Tiger. I have a little experience with a Columbia and while it is a nice plane, I do not recommend it as a primary trainer.
If she sits in a Tiger, she is going to want one.

I’d get her at least to the solo in a 172, Archer, or similar. She’s probably going to solo relatively quickly given her prior exposure and generally understanding how aviation works and, based on my 5 minutes meeting her, being sharp overall. I think you can fade the 10-15 hours of exposure to flight school airplanes. Once she’s done that, you have all kinds of excuses to go look at airplanes and she’ll be coming from a better sense of “yeah, this is what I want”. And a not for nothing observation: if she turns out to change her mind and want to switch airplanes, you’re not really in a position to say no.

My recommendation is based on a bit over 30 years of flight instructing and quite a few women students.
