It's true that a single blade is the most efficient, but I don't believe it's because it's running in clean air. There are certain losses that are associated with each blade and increase with the number of blades, but the losses have more to do with induced drag and tip losses than passing through disturbed air. As the plane moves forward, each prop blade "sees" clean air.
A 5 or seven blade prop is practical on these planes because a single blade prop long enough to absorb all the HP would be digging furrows on takeoff.

Dang that is ugly looking! Of course, i'm the guy that wishes i could replace that ugly three blade hartzell scimitar prop on my 550 engine with a lighter, faster, and more efficient 2 blade prop. Leldon

It stows away much easier when you need to retract it for gliding.
