With the Gulfstream, pitot heat needs to be on to tell the system that the probes are valid (system disregards any probe with failed heat regardless of OAT). Can't test the stall barrier (shaker/pusher) with heats off (G550 & prior). On the G650, the flight control system won't go into normal law unless a minimum number of probes are valid. That is why we turn them on after engine start.
Bet those probes have a temperature regulator (thermostat).
Most lesser airplanes don't, just fixed wattage heating elements, hence a line up and after landing item to turn on/off the pitot heat.
