V-tail Bo to a jet is an unusual transition unless there was some sort of step change in financial situation.

I can appreciate that fact, but my question is regarding the piloting skills and insurability... not the cost; not to be cavalier about money, but we live significantly below our means by choice...

It’s a very easy airplane to fly and with some good training, your transition is doable. You also can get insurance. There will definitely be some mentor requirements and it will be expensive for a while.
